Baked Stuffed Caribou Heart
Wipe heart clean and soak overnight in salted water. Trim off blood vessels and fat. Stuff cavity with dressing and skewer or sew up heart. Place in roaster and lay strips of salt pork over heart. Add 1 cup water to pan. Cover and bake at 325oF for 3 hours or until tender.

Baked Stuffed Moose Heart
Wash heart and soak overnight in soda and water. Clean out vessels inside. Prepare dressing and stuff heart. Skewer or sew up or tie with line. Place in a baking pan and put strips of fat pork over it. Add a little water to pan and cover. Bake at 325F for 3 hours. Baste occasionally.

Barbecued Caribou Ribs
Brown ribs in salt pork. Place in casserole and cover with barbecue sauce. Bake at 325oF for 2 ½ hours. Baste sauce over ribs frequently. Delicious served with rice.

Barbecued Duck
Cut ducks in serving pieces. Place in roaster. Combine all ingredients and pour over ducks. Cover and bake for 2 hours.

Barbecued Rabbit
Dredge rabbit with flour and brown in fat. Place in a large casserole. Combine all ingredients of sauce and pour over rabbit. Cover and bake at 325F for 2 hours. Baste frequently
